Spicy Lentil Meatballs
These hearty spicy lentil meatballs are going to give you so much life! Besides being a great source of fiber, protein, and iron, lentils are super flexible in the kitchen and don’t take much time to cook. You simply have to boil the dried lentils in water for 20-25 minutes and you’re set- no soaking required. For this recipe, you’ll be throwing most of the ingredients into a food processor and pulsing. Make sure not to overdo it so you don’t get a thin paste. You want the mix to maintain some of its chunkiness. You’ll then add oat flour and egg to the mix. The oat flour can be made in less than 2 minutes by throwing rolled oats into a blender or food processor until a flour consistency is reached.
The mix will be placed in the refrigerator so it can stiffen a bit, and then you’ll be scooping out your lentil balls onto parchment paper. Pop in the oven and 25 minutes later, your balls are almost ready! Move them to the stovetop and cook in tomato sauce for a few minutes. I enjoyed these bad girls over pasta and Brussel sprouts. You can go that route or enjoy them over a salad or make a lentil ball sandwich! One serving is 3 balls; if you won’t be eating them all up that week you can freeze in an airtight container and re-heat in the oven or on the stovetop. SPICY LENTIL MEATBALLS

INGREDIENTS
2 cups cooked lentils
2 tablespoons scallions, chopped
½ jalapeno, de-seeded
3 cloves garlic, chopped
¼ cup cilantro
1 tablespoon tomato paste
1 egg
1/3 cup oat flour*
Salt and cayenne pepper to taste
1 cup of tomato sauce
INSTRUCTIONS
In a food processor, pulse the cooked lentils, scallions, jalapeno, garlic, cilantro & tomato paste together. The consistency should be more on the chunky vs pasty side
Remove from the processor and scoop out and into a bowl
Add 1 egg and the oat flour. Using a whisk or large spoon, mix the ingredients together well
Season with salt and cayenne pepper, to taste
Place the bowl in the fridge for 30 minutes
Preheat the oven to 375F
Line a baking sheet with parchment paper.
Scoop out 10-12 lentil balls from the bowl with an ice cream scoop or spoon. Use your hands to help mold the balls. Place the balls on parchment paper as you go
Bake at 375F for 20 minutes, then flip them over and bake for another 5 minutes
On the stove, cook these balls in 1 cup of tomato sauce for 5 minutes
Enjoy over pasta, salads, or in a sandwich!
NOTES
To make oat flour, simply blend rolled oats until flour consistency is reached
